Cook Time: Approximately 3 hours

Ingredients

Herb Butter

  • 8 tbsp (1 stick) unsalted butter, softened
  • 2 tbsp chopped mixed fresh herbs (parsley, sage, rosemary, or marjoram)
  • ¼ tsp freshly ground black pepper
  • 1 tsp kosher salt

Turkey

  • 1 whole turkey (12–14 lb), thawed
  • 3 tbsp unsalted butter, melted
  • Traeger Pork & Poultry Rub, to taste
  • 2 cups chicken or turkey broth
  • Traeger Apple Hardwood Pellets

Directions

  1. Mix the softened butter with the fresh herbs, black pepper, and salt. Set aside.
  2. Remove the giblets and neck from the turkey cavity. Pat the turkey dry with paper towels.
  3. Place the turkey on a roasting rack inside a roasting pan. Tuck the wings behind the back and tie the legs together with butcher's twine.
  4. Gently loosen the skin over the turkey breasts and spread the herb butter underneath. Massage the skin to distribute the butter evenly.
  5. Brush the outside of the turkey with melted butter and season with Traeger Pork & Poultry Rub. Pour the broth into the roasting pan.
  6. Preheat the pellet grill to 325°F. Place the roasting pan on the grill and cook for approximately 3 hours, until the thickest part of the breast and innermost thigh reach 165°F. Use a meat thermometer to verify doneness.
  7. Transfer the turkey to a cutting board and rest for 20–30 minutes before carving.
